Step-by-Step Instructions

Heat the oil in a large Dutch oven or pot over medium heat. Add the lamb and cook until browned on all sides, about 5 minutes. Remove the lamb from the pot and set aside.

Add the onions, carrots, and potatoes to the pot. Cook until the vegetables are tender, about 10 minutes.

Return the lamb to the pot and bring the stew to a boil. Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Add the pearl barley to the pot and cook, covered, for an additional 30 minutes, or until the barley is tender.
