Step-by-Step Instructions

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned, about 5 minutes. Remove the beef from the pot and set it aside.

Add another tablespoon of oil to the pot, then add the onion and cook until it's translucent, about 5 minutes. Add the garlic and cook for 1 minute.

Add the carrots and potatoes to the pot, stirring to combine. Cook for 5 minutes, stirring occasionally.

Add the beef broth, red wine, thyme, rosemary, and bay leaves to the pot. Stir to combine, then add the browned beef back to the pot. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 1/2 hours, or until the beef is tender.
