Step-by-Step Instructions

1
Preheat the oven to 375°F (190°C). Cook the whole wheat lasagna noodles according to the package instructions. Drain and set aside.
2
Prepare the vegan salmon fillets by cutting them into smaller pieces and seasoning with salt and black pepper. Sauté the pieces in a little olive oil until they are lightly browned and set aside.
3
In a large skillet, heat some olive oil and sauté the garlic until fragrant. Add the fresh spinach and cook until wilted. Season with salt and black pepper to taste.
4
In a large bowl, combine the cooked spinach mixture, sautéed vegan salmon pieces, and tomato sauce. Mix well to combine.
5
To assemble the lasagna, spread a layer of the tomato sauce on the bottom of a 9x13 inch baking dish. Arrange 4 lasagna noodles on top, followed by a layer of the spinach and salmon mixture, and then a layer of vegan mozzarella shreds. Repeat this process two more times, ending with a layer of mozzarella on top.
6
Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the lasagna is hot and bubbly.
